Ingredients

Chicken Orzo Soup1 tablespoon olive oil, 1/3 medium onion, finely diced 1 clove garlic, minced1/2 small carrots,4 cups of unsalted chicken broth,1 bay leaf,1/2 cups orzo pasta50g chicken meat, skinless, boneless, chopped,Salt and pepper, to taste
Method

How to cook

  • 1. In a pan, heat the olive oil over medium-high heat.
  • 2. Saute the chicken, onion, garlic, and carrots until tender, about 5 minutes.
  • 3. Add the chicken broth, bay leaf and bring to a boil. Add the orzo and cook, stirring occasionally,
  • for 10 minutes, or until orzo is tender.
  • 4. Remove the pot from the heat. Discard the bay leaf and season with salt and pepper, to taste.
